A Clean Tasty Breakfast

 Good afternoon! I hope you are having a wonderful week! 

 It's almost the weekend and at our house we love to have Waffle Friday!


 
 Last week I tried something a little different. I decided to make gluten and dairy free waffles. I then topped them with a homemade peach puree and fresh chopped strawberries. The colorful combo turned out to be a great alternative for syrups filled with sugars and preservatives.

 This was my first time testing out Mama's Gluten Free Pancake Mix. This great mix can be found in our store or online at: http://www.glutenfreemama.com. They have a wonderful selection of gluten free products and recipes to go along with them.




 Mama's Pancake Mix requires 1 1/4 cups milk and 2 eggs.  To make the waffles dairy free, I substituted almond milk for milk. If eggs don't agree with you, I suggest swapping the eggs for applesauce. Personally, I would use egg whites next time because I found that the yolks were a little overpowering for my taste.

 Once I whipped up the mix I poured the batter in my Waffle Maker and prepared my topping.

I had frozen peaches in the freezer which I pureed with my Food Processor and my strawberries were pulled from the freezer as well. I like to get in a little extra fiber whenever I can
so I sprinkled a tablespoon of Linwoods Ground Flaxseed & Goji Berries on top.
